Our Beef. Your Table.

How it works

We understand that life is busy. Our goal was to keep this as easy, quick and simple as possible. A lot of farms that sell beef are by pre-order only. We are trying to get ahead of that with 1/4s in stock to try and cut down on wait times for our customers. We understand that planning 3 months ahead is difficult. We may not always be able to keep up with demand so there may be times where we fall behind and you'll have to pre-order. Worst case would be a 3 month wait. Best bet is to to buy if you see there's stock.

We also aren't doing custom order sheets. We've found that over time, 90% of people want their beef cut the same way, and about 50% of people are overwhelmed with a cut sheet and the thought of telling an experienced butcher how they'd like their quarter cut. We try and get the most steaks we can out of the animal and then sort of work it back from there with "average" amounts of everything else. Steaks are 1 1/4" thick which we've found to be the perfect balance for cooking our beef.

The other big complication we've seen is that most people sell by hanging carcass weight, and from the ranchers perspective this makes sense. Ultimately this is what we've based our pricing on which is $10/pound on hanging carcass weight. (This is an all-inclusive number the includes butchering, aging and packaging. For your info in case you're gauging price) But what this does is it creates complexity in that we need you to make a deposit on an animal (as they all weigh out differently) and then months later when we find out what the carcass weighed out at, we can give you the final amount where you'd have to pay. We found that this is a bit uncertain for the customer and really drags the process out. So what we thought is why don't we make 1/4 of beef a predetermined weight (so you have certainty,) and everything over the 120lbs of weight we take out and try and sell as specials or offer as samples to new customers who want to try our beef without committing to a whole 1/4. Simple, quick and easy. 

 

Ground Beef is sold by 20 pounds or greater. You can order 20 pounds, 30 pounds, 45 pounds, anything over 20, just not 4 pounds for example. New customers wanting to try some can pick up one package on the farm to try it. Please call ahead to arrange this. 

Primal Ground. What is it?

As we learn more about the food we eat, we're learning that not only is it important to eat a "whole" animal, meaning "all the parts," but getting certain vitamins and minerals only found in organs is also exremely important for our health. Some people buy supplements with these organs dehydrated and capsulated, but we tend to think that eating the real thing is the safest bet. The only problem is it can be a bit of a mental thing for some people to eat liver for example. Or maybe a heart, or a tongue. What we do is make a special blend of ground meat where we mix about 20% organ meat. This makes it barely noticeable but you are able to get all the benefits of eating the actual organs, not a supplemented version. Think about it, you could be eating burgers AND eating one of the most vitamin rich ground meats on the planet.  

Specials 

Our main focus at this point will always be bulk. But there are odd times where we may have certain products that have spilled over into the "extra bin" where we can offer them as specials here. This is a great opportunity to try something new.
